Chenin Blanc Poached Salmon with Citrus Herb Sause

Ingredients:
4 salmon fillets
1 bottle of Ayana Chenin Blanc
1 lemon, thinly sliced
1 orange, thinly sliced
4-5 sprigs of fresh thyme
Salt and pepper, to taste
For the Citrus Herb Sause:
1/2 cup Greek yogurt
Zest and juice of 1 lemon
Zest and juice of 1 orange
2 tablespoons fresh chopped dill
Salt and pepper, to taste
Directions:
In a large skillet or pan, pour Ayana Chenin Blanc and add lemon slices, orange slices, and fresh thyme. Bring the wine to a gentle simmer over medium heat.
Season the salmon fillets with salt and pepper. Carefully place the salmon fillets into the simmering wine mixture, ensuring they are fully submerged.
Poach the salmon for about 10-15 minutes, depending on the thickness of the fillets. The salmon should be opaque and easily flake with a fork.
